Michelin Star Ramen: Tsuta

Tsuta is one of Tokyo's most revered ramen shops. After gaining much acclaim locally for their shoyu and shio soups, they were awarded a Michelin Star, the first ramen shop in the world to do so. Their popularity means that there is a special ticketing system in place. Come in the morning, get a ticket, and return during your ticket's time. Despite having to jump through these hoops, Tsuta is worth it.

In 2016, Tsuta, a famous Ramen Shop was the first Ramen to ever receive a Michelin Star in the world.

The line used to be long to get your hands on a delicious bowl, but now it’s insanely long! You need to go to the shop at 7am to line up in order to get a ticket that tells you what time you have to come back. It’s a bit of a tricky system, but the owner to do so because people who were waiting in line for 4 hours used to be very loud and disturbed the neighborhood.

However, one of our Creators, Brian from Ramen Adventures, managed to go there and film a Food Review of the now famous Black Truffle Shoyu Soba Ramen!
This is the cheapest Michelin Star Meal you can eat out there, so let’s see how it turned out!

Visually, this Black Truffle Shoyu Soba Ramen looks absolutely stunning! Toppings include 1 slice of Chashu, Menma (which is bamboo shoot), a beautiful egg and Black Truffle!

According to Brian such level of perfection regarding the Shoyu broth can only be found in 2 other shops: En and 69 n’ Roll One, both an hour away from central Tokyo. The broth uses a blend of 3 different soy sauces: The main one is from Shodoshima, a small island in Japan’s Seto Inland Sea, and the others are raw unpasteurized soy sauce from Ibaraki and Wakayama.

When it comes to noodles, hand-made noodles always make the difference, and these ones are no exception. Made using a mixof four different Japanese flours, you’re far from the usual Cup Ramen noodle!!

Also: The Chashu. that amazing piece of meat on top of the Ramen, has been roasted and let it marinate with herbs, to give it an Italian Flavor! Original and delicious! The pickled bamboo shoot topping has a lot more flavor to it than you might think. It’s cooked in the stock of the Ramen, along with red wine! No need to write a huge paragraph to tell you how good that egg was. Just look at it…..Beautiful!
